I understand what you mean about the red food coloring, when I saw the amount the recipe asked for I got a little scared that I would grow a second head or something. But like you said, people like their red velvet cake red, so I used beet juice from a can of sliced beets and did put a couple of drops of food coloring inside to make it more red.</description>
